Zucchini Almond
Coffee Cake

(B&D's Favorite Recipe)

Zucchini Almond Cake

3 cups flour
2 tbsp baking powder
1 tsp baking soda
4 eggs
1/2 cup sugar
3/4 oil
1 tsp almond extract
3 cups grated summer zucchini
1 cup ground almonds

Sift together flour, baking powder & soda.
Beat eggs together until thick & light in color. Gradually add sugar. Stir in oil & almond extract.
Blend in dry ingredients.
Stir in zucchini & ground almonds
Pour into butter pan.
Bake at 350 for 1 hour.

Chocolate Zucchini Cake

1/2 cup sugar
1/2 margarine
1/2 cup oil
2 eggs
1 tsp vanilla
1/2 cup milk
2 cups shredded zucchini
2 1/2 cups flour
4 tbsp cocoa
1 tsp baking soda
1/2 tsp cinnamon
1/2 tsp salt

Cream margarine with sugar and oil.
Add eggs, vanilla and milk
Sift in dry ingredients.
Stir in zucchini.
Spoon into greased pan.
Bake at 325 for 40-50 minutes.

Let both cakes cool and rest.
Wrap well with ceran wrap and tin foil.
Preserve & Freeze.
Refridgerates Well 
Up to 8 months.
