Kale For The Catholics

The RCs in our house lost their leader earlier this week & right on the cusp of Lent. That being said, Most were still more than willing to dive into forty days & forty nights of fasting, prayer and repentance, whilst also withdrawing from meat on Fridays. Tradition is tradition. Could, Krishnamurti be correct? Is the symbol is more important than the individual? 

Who knows, but right now its seems some are in need of protein & iron.  Here, is a dainty yet delightful substitute for those Friday Feedings: a Kale & Quinoa Salad.



Ingredients:

1 big enough bunch of curly kale (stems removed and chopped into bite-able pieces)
1 cup cooked quinoa
2 carrots peeled and grated
1 avo
1 tsp garlic powder
2 tsp Dijon grainy mustard
2 tsp apple cider vinegar
Salt and Pepper to taste
1 tomato chopped into cubes

In a big salad bowl combine kale, quinoa, onion, carrot & avo.
Add cider vinegar, lemon juice, mustard, garlic powder, salt and pepper.
With both hands, massage and mix all ingredients together, 'til kale is coated and avo
is completely mashed.
Top with cubed tomatoes.
Give a little grace,
then enjoy!
