Smacks, Bites & Biscotti

Raspberry Smacks

‘A rich, sticky square reserved for special company.’

Although the original recipe called for raspberry jam, we substituted for Nan’s homemade plum and proved this recipe tastes great with any flavour.

Bottom Layer:

1 1/2 cups All-Purpose Flour. 1/2 cup Brown sugar. 1 tsp baking powder. 1/4 tsp salt. 2 egg yolks. 1 tsp vanilla 

Crumble first 7 ingredients together until mealy then press onto an ungreased 9x9 inch pan. 

1/2 plum jam delicately spread over bottom layer

Top Layer: 

2 egg whites. 1/3 cup brown sugar.  Beat egg whites until frothy. Add second amount of brown sugar 1/3 at a time beating until stiff. Spoon over jam layer.

Bake in 350  ̊F oven for 25 minutes or until golden
Cut when cool cut into squares with sharp knife.

Butter Tart Bites

'These bites have a rich caramel taste with a gooey chewy texture. Similar to the butter tarts Diletta use buy for us on cool wintry Saturday nights.'

Bottom Layer:

½ cup butter or margarine. 1/3 cup brown sugar. 1 1/4 cups All Purpose Flour. 

Crumble first three ingredients together in bowl. Press into ungreased 9x9 inch pan. 

Bake at 350 degrees for 10 minutes. 

Top Layer: 2 eggs. 1 cup brown sugar. 1/4 cup All Purpose Flour. 3/4 baking powder. 1/4 tsp salt. 1 1/2 cups raisins. 1/2 cup chopped walnuts. 

Beat eggs and second amount of sugar until light & thick. Add the rest of the ingredients. Stir and spread over bottom layer.  

Bake at 350 degrees for about 30 minutes or until centre is almost firm. Cut into squares when cool.

First Layer:  

1 1/2 cups All Purpose Flour. 1/4 cup sugar. 1/2 cup butter.

Crumble first three ingredients until mealy. Press into ungreased 9x9 inch pan. Bake in 350  ̊F oven for 20 minutes.

Second Layer: 

2 eggs. 3 tbsp lemon juice. 1 cup sugar. 2 tbsp All Purpose Flour. 1/2 tsp baking powder. 1 cup shredded coconut. 1/4 tsp salt


Beat eggs slightly. Stir in remaining 6 ingredients. Spread over first layer. 

Bake in 350  ̊F oven for 30 minutes until set in center and light brown in colour. Cool and sprinkle with icing sugar before cutting to desired square size. 

Best Biscotti

 ‘MUSTAZZOLI’ a softer, sweeter version of your usual run of the mill biscotti.’

12 oz. Sugar
8 oz. Honey
8 oz. Water
2 tsp oil
1 tsp baking soda
Zest of a whole orange
1 tsp cinnamon
½ -1 cup halved almonds
5 ½ cups flour.

Combine all ingredients in a bowl and roll out 8 loaves.

Place four loaves lengthwise on a cookie sheet with parchment paper and bake at 350 degrees for approximately 20 minutes.

Let cool, then cut to preference.
